Warner Hall’s Corn and Vidalia Onion Salad

Corn and Vidalia Onion Salad

What You’ll Need

2 parts Sweet Corn

1 part Vidalia Onions, Small Diced

To taste Garlic, Chopped

For garnish Scallions, sliced

3 parts Lemon Mosto Oil

1 part White Balsamic Vinegar

To taste Salt & pepper

Dash Tobasco

Dash Worcestershire

What You’ll Do

Roast the sweet corn, in the husk, either on the grill or in the oven. Just until a little tender.

Sauté the onion and garlic in the lemon mosto oil.

Add the corn.

Sauté for a few more minutes.

Remove from heat and add the rest of the seasonings.

Taste and adjust the seasoning if needed



Note: The corn and onions are a 2: 1 ratio. The lemon mosto oil and white balsamic vinegar are a 3: 1 ratio. For the garlic use it to your liking, it can also be toasted a little bit for flavor. A little bit of lemon thyme would add a nice flavor also.
